If you are having a backyard get together with friends and family or even cooking up a quick dinner to meal prep for the week, this simple and fast recipe for vegetable soup will be sure to impress.
There are a ton of different ways to make vegetable soup. You want to start with a healthy fat like olive oil or butter and add it into the preheated pot. Next, you are going to want to toss in some onions and celery. Just let those sweat for maybe a minute where you can then add almost any vegetable into the pot. For this demonstration in the video above they use butternut squash, but again you can use any vegetables you are craving. You are going to want to peel, cube, and toss into the pot. You are also going to want to add in broccoli, asparagus and cauliflower.
The best part is you can really add whatever you want to it like garlic, thyme, pepper and salt…yum!! Then, add broth chicken or vegetable. You are going to want to simmer until the vegetables are nice and tender. Next, you can put in a blender to pure or use a hand blender. Complete your delicious soup by pouring it into a bowl and add some garnish. That’s it…it really is that easy!
