Meet Olly Bird, the Executive Chef at Zelman Meat. Zelman Meat is located in the UK and serves prime cuts of beef with delicious cocktails! And for those of you who don’t know Olly, he has a strong passion for cooking and in the videos above he’s going to show you how to make some of his most amazing dishes right at home.

Entertaining for a few guests? Don’t worry, there is a recipe for everyone here and Olly breaks it down to show you all of his tips and tricks. One of my favorite recipes he shows is the beef short rib slow roasted in the oven with a Jack Daniels sauce…yum!

With this recipe, you will be sure to wow your guests and it’s pretty simple to make! First, you are going to want to make the beef rub. The beef rub consists of 45g kosher sea salt, 25g caster sugar, 50g smoked paprika, 10g onion and garlic powder, topping it off with a pinch of chili powder. Mix, and rub onto the meat. Then, place in the fridge to marinate for 6-12 hours and you will be good to go to place it into the oven to slow cook. The oven should be heated at 145 degrees and the meat should cook for 4-5 hours.

While that cooks you can make your Jack Daniels Sauce. Start with 65g molasses, 40g brown sugar, 1tsp English mustard, 0.5tsp of ground cumin, 1tsp onion powder, 1tsp garlic powder, 0.5tsp cracked black pepper, 25 ml soy sauce, pinch of chili flakes, 120ml white wine vinegar, 130ml water, 10g Worcester sauce and a dash of tabasco. Bring it to a boil, mix in 500g ketchup, 30ml liquid smoke and 50ml of Jack Daniel’s Tennessee whiskey.

Once the short rib is done in the oven, let cook, dip in the sauce and enjoy!
